Lauren and Erik met in Austin, Texas, working as bartenders in 2016 at the Domain. The first time they spoke, Lauren noticed Erik’s accent and couldn’t help but playfully correct his pronunciation of a “Vegas bomb.” With a grin, she asked, “Where are you from?” Erik replied with a quick-witted comeback and said, “Minnesooota,” which sent them both into laughter. They began spending time together in a close-knit group of friends, where teasing Lauren and Erik about being “more than friends” became a regular pastime. For the next two years, they both insisted the friendship was purely platonic — and it was — but those around them clearly saw something different in the way they interacted. Eventually, the group hangouts became more one-on-one time. Around that same time, Lauren began looking for a fresh start in Colorado, and Erik accepted a new job in Houston, moving there in September of 2017. As Thanksgiving approached, Lauren — knowing Erik was far from family — invited him to her Nana’s house for dinner. Nana instantly adored him, and Lauren’s brother couldn’t resist poking fun, calling him an Abercrombie model.

Not long after, Lauren chose to move to Houston as well, wanting to stay close to her sisters and Nana, who were also living there. With only a few familiar faces in a new city, Lauren and Erik quickly became inseparable. After two years of claiming they weren’t more than friends, the pull between them became impossible to ignore. What started as friendship evolved into something deeper — and, eventually, undeniable. The Proposal

Erik always claimed to have a “plan.” Lauren, along with both families, thought that plan would unfold any day… and then weeks passed… and then years. “The man with a plan” quickly became a running joke, but Erik was simply waiting for the perfect moment — and it came over 4th of July weekend, during a beloved tradition at the Pearson family lake house in Minnesota.

What started as an annual trip for Lauren and Erik eventually became a joint tradition with both of their families, as the years went on and the families grew closer. With the help of his dad and brother Jens, Erik proposed on the dock during one of Glenn’s legendary firework shows. As sparks lit up the sky, Erik got down on one knee and asked Lauren to marry him. The reaction? Pure joy, a few happy tears, and a loud chorus of “about damn time!” from both families.

The next morning, everyone sat together replaying the night and soaking it all in. That’s when it hit them: it was never really Erik’s plan — it was God’s plan.
